Crunchy, Salty, Yummy, Healthy Snack!

Chickpeas, also called garbanzo beans, belong to the legume family, which includes a variety of beans, peanuts, soybeans and lentils. Opting for legumes over foods high in saturated fat might lower your risk of heart disease, according to the Linus Pauling Institute. Chickpeas also offer specific health benefits, and consuming them regularly boosts your intake of a few key nutrients.

Crunchy Garbanzos
•1 can chickpeas (garbanzo beans)
•1 tbsp olive oil
•Mexican spice (or any other spices you crave)

Rinse beans and then pat until totally dry. Toss in olive oil and spices until coated. Place in a single layer on baking sheet then bake at 400 degrees for 30 minutes (stirring once or twice). Makes three servings.

You can portion out one yellow for a crunchy snack instead of chips

Chocolate Cake- 21 Day Fix Approved

These things are the crave busters!  Want something chocolate?  Here you go!!!  

Mini Chocolate Cake

1/2 Cup Oats (ground extra fine like cake flour I use my coffee grinder)
1 Scoop Chocolate Whey
2 tsp Baking Powder
1 TBSP ground flax
1/8 Cup mini dark chocolate chips

1 sugar free pudding cup in chocolate
Two full eggs
1 tbsp coconut or caramel sugar free syrup (Torani or Da Vinci)

Preheat oven to 375. Spray muffin pan with Pam. Mix all dry ingredients together in a medium bowl. Mix in the wet ingredients until smooth. Pour evenly into muffin pan. Bake for 12-15 minutes or until tooth pick comes clean. A serving is two mini cakes. Enjoy.

Blueberry-Orange Vanilla Protein Muffins- Gluten Free AND 21 Day Fix Approved

These are Ah-Maz-Ing!  Packed with protein and GLUTEN FREE.

Tasty, delicious for a healthy protein packed snack on the go!

Blueberry Orange Vanilla Protein Muffins
1/2 C. Vanilla Whey Protein Powder
2 Whole Eggs
1 tsp. Baking Powder
1 C. Oats
3/8 C. Coconut Milk
1/4 C. Coconut Flour
1 Tbsp Orange Peel
1/2 C. Plain Greek Yogurt
1/2 Cup Frozen Blueberries

Preheat over to 350 degrees
Blend everything but the blueberries together until smooth.  Fold in the blueberries at the end.
Pour batter into greased cup cake tins.
Bake for 20-25 minutes or until a tooth pick comes out clean.

These are fantastic!  If you are on the 21 Day Fix Two Muffins count as:

1/4 purple

Super Quick and Easy Shrimp Stir-Fry - 21 Day Fix Approved!

Ok so your in a pinch.  You have nothing thawed out to make a healthy 21 Day Fix portioned meal.  What are you going to do?

Don't worry!  I got ya covered! This is a healthy, yummy, quick and easy meal!
I used a RED container, GREEN container, YELLOW container and a TEASPOON (half coconut oil and half sesame oil).  You can use any variation of those containers.  One night I only used a red and a green for this :)

I bought everything at COSTCO :)

21 Day Fix- Mini Protein Power Bites

I love these!  I used to make them when I was prepping for fitness competitions!  They are super portable and packed with protein.

21 Day Fix Protein Power Bites

Each version will always use 1 green container and 1 red container.  My muffin tin makes 4 muffins with these ingredients, but your muffin tin may be larger or smaller.  Just be sure to portion out your green and your red evenly.

Basic Power Bites

1 Green container of -   Asparagus, Zucchini, Mushroom, and spinach.  All diced small and pre- sauteed.
1 Red container of eggs, beaten with 2 tbsp of water.  (Tip!  use your shaker cup to mix your eggs and pour into your muffin tin :)

Preheat oven to 375 degrees.  Spray muffin pan with non stick cooking spray.  Sautee your veggies for about 2-3 minutes (not the spinach).  Portioning out your veggies into your muffin cups so they are even then add your chopped fresh spinach on top and then top with your egg mixture.  Add some salt and pepper and bake for about 35 minutes.  These will pop right out after baking.

Option to portion out a yellow container of quinoa or rice into your power bites as well.  mix your veggies and quinoa or rice separately before adding to muffin tin.  This will make an extra power bite.

Finally (my favorite) option to add a blue container of Parmesan cheese on top of your bites.  Just sprinkle a blue container over the top of your bites.  This adds a yummy crust over the top!

Amazing Roasted Fingerling Potatoes- 21 Day Fix Approved

Trying to find something yummy to fill your yellow container on the 21 Day Fix meal plan?  You gotta try these!  They are Roasted Fingerling Potatoes seasoned with 21 Day Fix  All Purpose Seasoning. 

They are slightly crunchy.  They are full of flavor.  They will cure the boring rut!

What is a fingerling potato? A fingerling potato is a small, stubby, finger-shaped type of potato which may be any heritage potato cultivars. Fingerlings are varieties that naturally grow small and narrow. They are fully mature when harvested and are not to be confused with new potatoes. Popular fingerling potatoes include the yellow-skinned Russian Banana, the orange-skinned French, and the Purple Peruvian. Due to their size and greater expense compared to other potatoes, fingerlings are commonly either halved and roasted as a side dish or used in salads

Summer is almost here!  In the past, this would give me mixed feelings.  I would be excited about the warm weather coming and all the fun activities I could do, but there would ALWAYS be that lurking dread because I looked and felt awful in my summer clothes.

21 Day Fix Approved- Thai Coconut Curry Chicken

Struggling to find something delicious for your weekly meal prep?  Here is what I am going to do for next weeks meals!  Thai Coconut Curry Chicken!  This recipe is super versatile! 

This is a RED, GREEN, YELLOW and BLUE container so be sure to check it off your list. I am going to prepare 5 days worth of my lunches and have them ready to go in my fridge so all I have to do in my mornings is just grab it and go, saving me time and money!!!

Here is what you need:

-5 Red containers worth of COOKED (grilled or baked) chicken breast, seasoned with salt and pepper and cut into 1 inch chunks.

-5 Green containers of stir-fry veggies. Fresh or frozen is fine.

-5 Yellow containers of cooked brown rice.

-1/4 cup chopped cilantro

1/2 cup 2% plain Greek Yogurt
4 Tbsp light coconut milk
1 Tbsp Creamy Natural Peanut Butter
1 Tbsp Curry Powder (or more if you like it!)

Heat large skillet or wok on medium-high heat.

In a bowl mix together the ingredients for the Thai Curry Sauce. If you would like a thinner sauce, you can add a little water to thin it down. Set aside.

Once skillet or wok is warm add 1.5 tsp of coconut oil to pan and add your veggies.  Season with a little salt and pepper. Cook until your veggies are aldente.

Assemble your containers for your lunches.

Assemble your meals ahead of time to save time while on the 21 Day Fix Meal Plan

-Be sure to choose a container large enough to fit all your 21 Day Fix portions in it! 

- Start with your yellow container of brown rice.

-Then add your green container of veggies

-Next is your red container of chicken

-Finally top off with a blue container of sauce.

-Garnish with a bit of your chopped cilantro on top.

Be sure to secure your lids on and keep in your fridge.

An option to eliminate your yellow container and ADD a green container is use a bed of bean sprouts uncooked first on your first layer.

I love it because.....

I love it because it is the one meal in my day I don't have to plan, think about, or try to come up with on the 21 Day Fix Meal Plan. Every day I am getting my daily dose of dense nutrition for breakfast on my way into work in my convenient shakercup.
Came to the stop light this morning on my way into work. Look over to my left and there was a woman with a bowl of cereal and a spoon trying to eat her breakfast with her elbows on the steering wheel. I don't know about you, but I don't think that is the most safest breakfast to consume while driving, let alone nutritious.

folks I've got the easy button. I get my daily dose of dense nutrition every morning while driving to work in my convenient shaker cup. I get all the wonderful super foods phytonutrients, adaptogens , probiotics, prebiotics, protein and healthy carbohydrates in one delicious meal in my shaker cup.

 I love it because it has helped me kick my cravings to the curb! With its over 70 all natural whole foods, I am giving my body the nutrition it craves. With my craving for junk kicked to the curb, I have lost weight just by adding in my tasty shakeology every day.

I am also healthier! I used to catch anything and everything all the time! I would use up all my sick and vacation days being sick! I don't know about you, but I would like to have fun on my vacation days not laying in bed feeling awful! I have not used a sick day in in a whole year! Now that works for me!
