21 Day Fix- Mini Protein Power Bites

I love these!  I used to make them when I was prepping for fitness competitions!  They are super portable and packed with protein.

21 Day Fix Protein Power Bites

Each version will always use 1 green container and 1 red container.  My muffin tin makes 4 muffins with these ingredients, but your muffin tin may be larger or smaller.  Just be sure to portion out your green and your red evenly.

Basic Power Bites

1 Green container of -   Asparagus, Zucchini, Mushroom, and spinach.  All diced small and pre- sauteed.
1 Red container of eggs, beaten with 2 tbsp of water.  (Tip!  use your shaker cup to mix your eggs and pour into your muffin tin :)

Preheat oven to 375 degrees.  Spray muffin pan with non stick cooking spray.  Sautee your veggies for about 2-3 minutes (not the spinach).  Portioning out your veggies into your muffin cups so they are even then add your chopped fresh spinach on top and then top with your egg mixture.  Add some salt and pepper and bake for about 35 minutes.  These will pop right out after baking.

Option to portion out a yellow container of quinoa or rice into your power bites as well.  mix your veggies and quinoa or rice separately before adding to muffin tin.  This will make an extra power bite.

Finally (my favorite) option to add a blue container of Parmesan cheese on top of your bites.  Just sprinkle a blue container over the top of your bites.  This adds a yummy crust over the top!
