Chocolate Paleo Protein Brownies

I have been playing around with coconut flour in my recipes but this is my first all coconut flour recipe. It turned out fantastic! They are dense enough for a brownie, but not heavy. I am so excited to eat these this week! 

Be sure you get a good quality coco powder, it makes a difference! 

2/3 cup Coconut Flour
2/3 cup Dark Baking Cocoa
3 scoops plain organic whey protein powder 
1 tbsp baking powder
1/2 cup pumpkin purée 
1/2 cup unsweetened apple sauce
3 full eggs
3 tbsp melted coconut oil. 
1/3 cup Dark Chocolate Chips
Crushed walnuts to sprinkle on top

Preheat oven to 380 degrees. Spray muffin pan with non stick spray. 
In a large bowl combine all dry ingredients until well mixed.
Add in the pumpkin, applesauce and eggs to the dry ingredients and mix until smooth. 
Mix in the chocolate chips and the coconut oil. 
Spoon into muffin tin about 2/3's full. 
Bake for 18 minutes or until a tooth pick comes clean. Enjoy!
